
Homemade Pistachio Cookies Recipe

Ingredients
- 180gm butter with 10gm Country Farm Organics Virgin Coconut Oil
- 115gm Castor Sugar
- 17gm Egg Yolk
- ¾ tsp Vanilla Essence
- 190gm Country Farm Organics All Purpose Flour
- 2 tbsp (12g. rice flour)
- ½ tsp baking powder
- ¼ tsp French Sea Salt
- 25gm Pistachio Nuts (Roasted) Coarsely Grounded
Instructions
1. Preheat the Oven
- Preheat your oven to 170°C (340°F) and line a baking tray with parchment paper.
2. Prepare Wet Ingredients:
- In a mixing bowl, combine the butter (or coconut oil) and sugar.
- Add the egg yolk and vanilla essence to the bowl.
- Mix or beat the ingredients together until they are well combined, but avoid overbeating.
3. Prepare Dry Ingredients:
- In a separate bowl, sift the all-purpose flour, rice flour, and baking powder.
- Add a pinch of salt and stir in the coarsely ground pistachio nuts (saving some for coating).
4. Combine Wet and Dry Ingredients
- Gradually fold the dry ingredients into the wet ingredients in 2-3 batches.
- Use a spatula and mix in a cutting method to ensure everything is incorporated without overmixing.
- Once the dough is ready, transfer it to a plate.
- Using a plastic spoon, scoop out small portions of dough weighing approximately 10 grams each.
- Place the remaining coarsely ground pistachios on a separate plate.
- Dip each dough portion (don't roll) into the ground pistachios, ensuring the dough is lightly coated.
- Arrange the dough balls on a baking tray lined with parchment paper.
- Use a fork to press down on each dough ball to create an indent.
5. Bake the Cookies
- Bake the cookies for 25-28 minutes, checking for the desired golden colour.
6. Cool, Store and Enjoy:
- Once baked, allow the cookies to cool completely before storing them in an airtight container.
- It can be stored at room temperature for up to 1 weeks.
