Ingredients You’ll Need
Noodles & Sauce Base
- 4–5 bunches Country Farms Organics Stick Noodles
- 2 tbsp Fermented bean paste (taucu)
- 2 tsp Corn starch (for thickening)
- To taste: Country Farms Organics raw cane sugar & premium soy sauce
Vegetables & Protein
- 3 pcs Tomato
- 3 pcs Dried shiitake mushrooms
- 2 pcs Capsicum (green bell pepper)
- 2 pcs Firm tofu
- 3 pcs Small red chili (cili api merah)
- 1 pc Cucumber
- Optional: Celery leaves & green onion
How to Make Vegetarian Jajangmyeon:
1. Prepare the Noodles
- Boil the stick noodles for 5–15 minutes.
- Rinse with cold water, then return to hot water briefly to warm them.
- Drain, add a little oil, and set aside.
2. Make the Jajangmyeon Sauce
- Tomato: Score an "X" at the bottom, scald for a minute, peel the skin, finely chop, and set aside.
- Capsicum: Dice, scald briefly, and set aside.
- Tofu: Finely chop, fry until slightly golden, and set aside.
- Shiitake mushrooms: Dice and set aside.
- Chili: Finely chop and set aside.
- Sauce mix: Stir 1 tsp raw cane sugar into the fermented bean paste (taucu) with a little water and set aside.
- Thickener: Mix cornstarch with a little water and set aside.
3. Cook the Sauce
- Sauté shiitake mushrooms, then pour in the diluted taucu mixture.
- Stir well, then add tomato, capsicum, tofu, and chili.
- Pour in 1 small bowl of water and season with soy sauce.
- Let it simmer for a while, then thicken with cornstarch mixture.
4. Assemble & Serve
- Plate the noodles, pour the rich jajangmyeon sauce over them.
- Garnish with chopped celery leaves, green onions, and sliced cucumber.
